Matt Moran is one of Australia’s most renowned and recognised chefs and has long been a champion of seasonal, local produce growing up on a farm in western Sydney. Matt opened his first restaurant at the age of 22 and now owns some of Australia’s most celebrated venues which are part of the Solotel group. Matt opened Aria in 1999 and still oversees each seasonal menu, from top to bottom.
