Aria and Amaru joined forces for two special dinners in July 2019.
Executive Chef Joel Bickford invited Clinton McIver, owner and chef of Amaru, located in Melbourne, into the Aria kitchen for one night only on July 8 to cook a dinner that showcased the Australian produce that is at the heart of both restaurants. The following week, on July 15, Melbourne received a taste of Aria, when Joel visited Amaru to cook with Clinton for one night.
Across a three-day trip in Melbourne, both Joel and Clinton worked on an eight course menu that brought together techniques, ingredients and flavours they are both passionate about.
Having both been admirers of each other, the chefs were inspired to bring the experience of each restaurant to the alternate. “We really wanted to bring the Amaru experience to people in Sydney and the Aria experience to people in Melbourne, so that’s what’s been driving the creation of our menu.” says Executive Chef Joel Bickford.
