Pastry chef Andrew Honeysett is an Aria veteran, having honed his craft in our kitchens for over 16 years.
The Blue Mountains boy moved to Sydney as a young man in pursuit of a career. Originally trained as an accountant, Andrew discovered pastry-making to be a far sweeter endeavour in every sense. Following his passion and developing his talents in the kitchen, he went on to earn national acclaim for his visually striking and always-delectable desserts. His creations have served as sweet sign-offs to meals at the likes of Rockpool and Bather’s Pavilion, two of his previous appointments.
At Aria, Andrew is known for his sophisticated, subtly nostalgic approach. Making imaginative use of favourite ingredients, including seasonal fruits, top-shelf liqueurs and Valrohna chocolate, his dishes employ playful and surprising combinations of colour, taste and texture, forming the perfect finale to the Aria dining experience.
Andrew’s Aria chocolate tart became the most famous dessert in Australia when it was featured as the Dessert Challenge on the 2009 Grand Final Challenge of Master Chef.
