Patrick joined the team at Aria after several years in senior management and sommelier roles at some of Sydney’s most prestigious establishments.
A passion for wine going back to his Italian upbringing played an integral role in inspiring Patrick to explore a career in gastronomy.
Growing up in Italy, his exposure to family and community-driven food culture, and his personal relationships with winemakers, growers and producers sowed the seeds for a lifelong love of food. He spent several formative years working for a family-run restaurant, an experience he cites as the best industry education he could have hoped for, “far more valuable than any formal training”.
As General Manager, Patrick’s work is essential to both the day-to-day running of the restaurant as well as the long-term development of the business. His involvement in training and support, plays a key part in building a positive, united and passionate team culture, underpinning the staff professionalism at the heart of Aria’s reputation.
Patrick believes one of Aria’s great strengths is in creating a complete dining experience, even before the customer is seated and well after they leave the restaurant. He encourages engaging, interactive and individual relationships between staff and diner, ensuring every client walks out feeling special. “Look after the guest, and the guest will look after the business”.
A desire to continually to raise the bar at every level lies behind his commitment to uphold Aria’s name as one of the most renowned restaurants in Australia.
