In the heart of O'Connell, perched on a hill and hidden behind a cow paddock, lies a truffiere. Serene, calm and undisturbed, the area is known as Fish River and is where Carmine and Leesa Di Campli and their dog Frank, hunt for truffles. 

 

Matt Moran and Executive Chef Tom Gorringe recently had the honour of going truffle hunting with Carmine, Leesa and Frank, sourcing the truffles that Tom will cook with at our Truffle Dinner on Tuesday 9 August. We invite you to join us, as producer and chef share their love and respect for all things truffle.

Our truffle dinner at Aria will be hosted by Matt Moran, with words from Executive Chef Tom Gorringe, and Master of Wines Annette Lacey. Our Truffle Hunter Carmine Di Campli will share his truffle wisdom throughout the evening, as you share communal seating and overlook Sydney Harbour views. You will experience a specially curated five-course menu by Executive Chef Tom Gorringe, with paired wines carefully chosen by Master of Wines Annette Lacey.
