We are thrilled to introduce Tom Gorringe as the new executive chef of Aria. Tom comes to us with a wealth of experience, having recently held the role of head chef at hatted restaurant, The Gantry. Tom will work closely with Matt Moran to develop a menu that's driven by the seasons and champions their shared philosophy of using local produce and supporting Australian suppliers.

We're transforming part of Aria into a wine bar in 2021. The focal point for our wine bar will be its wine list which is one of the largest and most awarded in Australia, with more than 80 wines by the glass and 1700 bottles.

New to our drinks list, we are pleased to feature unique spirits from Copenhagen based distillery, Empirical Spirits. Forged with barley koji and Belgian Saison yeast in a special vacuum at a very low temperature, these special spirits are best served neat on the rocks or with our recommended serving suggestions.

joel visits pecora dairy
Aria’s Executive Chef Joel Bickford recently visited Pecora Dairy in beautiful Robertson, the Green Heart of the Southern Highlands. Joel spent the day visiting the farm, meeting the animals and discussing all things process and produce with Cressida, who founded Pecora Dairy in 2011 with her husband Michael McNamara.
