The 25th birthday degustation features interpretations of some of Aria’s best-loved dishes, proudest creations and iconic favourites. Opt for seven courses of exceptional quality, drawing on our heritage of creative vision with a reimagining of our most storied dishes over the years.

Or, dine on four courses showcasing our unwavering commitment to seasonality and the finest produce. Expect Australia's best seafood, including k'gari spanner crab and yellowfin tuna, as well as a contemporary take on the flavours of duck and pea inspired by Matt Moran's days at the Paddo Inn.

Meanwhile in the bar, a rotating à la carte snack menu offers a taste of Aria through the years, with dishes from Executive Chef Tom Gorringe alongside alumni including Matt Abé, Elvis Abrahanovicz, Paul Baker, Ben Turner, Jake Kellie, Ben Russell, Simon Sandall and Jason Staudt. Wine, special edition cocktails, and caviar will also be available.
